Last week I got a hold of a small box of Black Locust blossoms at our local farmer’s market. I quickly turned them into fritters.
This recipe is so easy that you can almost make it on a whim…well, as long as you have the key ingredient at hand.
- a handful of black locust blossoms
- 1 egg
- 2 tablespoon of flour
- a pinch of salt and pepper
- 1 tablespoon olive oil
- In a medium size bowl, beat the egg with a fork until the whites and yolks are blended in uniform color.
- Add a handful of black locust blossoms, mix until each blossom is coated with liquid egg.
- Sift the flour with a sifter or a fine-mesh strainer to break up any visible lumps – optional.
- Add the flour to the egg mixture and stir until well combined.
- Season with salt and pepper to taste.
- Heat olive oil in a large frying pan at medium high heat. Scoop the batter into the pan and flatten it with a spatula. Cook until both sides are golden brown.
- Remove the fritters from the pan and place them on a plate lined with paper towels to absorb excess oil.
- Sever immediately.
